Trincheras is an area located in a small valley within the mountains between Valencia City (Carabobo State) and the coast in the North Central region near Patanemo and Puerto Cabello. In its beginning, in the 1895 Trincheras was simply a single family farm, where coffee was produced. In later years, cacao was found nearby in the area that then consisted of small farms and cooperatives. The area is rich in history well known for its thermal water and ruins of the cacao fermentation trenches made of clay (gave the name "Trincheras" for the place), and the extraordinary water channels used to transport coffee down from the mountains. Some local cacao producers continue tanning or "curtido," with this traditional fermentation process. Given the valuable presence of Criollo, they obtain a good fermentation, and more importantly, the develop the "sabores y aromas" that highlight these beans from others in the country.
