What is Halvah? Halvah translated from Arabic means “dessert” or “sweet confection.” It’s difficult to pinpoint the exact origin of this ancient treat, but Persia is considered to be its homeland. Halvah spread throughout the Middle and Near East starting around the 5th century B.C.E. and was interpreted differently by each country, resulting in a large number of delicious variations of the recipe. In modern Iran, there are still chefs who specialize in Halvah called Kandalatchi. They have a great secret: how to thoroughly whip all the ingredients to the perfect, delicate foam, heat to the desired temperature, and then combine and cool, to achieve an airy sweetness that melts in your mouth.
